Pasteurization is the process of heating foods such as liquid egg products, dairy products like milk, cream or cheese; fruit juices, condiments, etc, to a specific temperature and time duration in order to slow microbial growth and extend shelf life. Pasteurization methods in the United States are standardized and controlled by the USDA. Exact standards vary by each product depending on factors such as fat content, intended usage, etc.

HTST Pasteurizing Systems

Employs a continuous pasteurization process. The product is heated by either a plate or tubular heat exchanger. The plate heat exchanger routes the product through a series of stainless steel plates clamped together in a frame, typically using hot water as the heating medium. Tubular heat exchangers are typically used for products containing particles or pulp which could block the channels of a plate heat exchanger.

It is critical that the HTST pasteurization process be designed so that the product is heated evenly until it reaches a prescribed temperature for a prescribed period of time. If the product does not meet the required temperature/time requirements it is re-routed by a flow-diversion valve back through the heat exchanger.
